Spicy Tomato Soup
Ingredients
- Passata Tomato Sauce - 1 tablespoon
- Baking Tomatoes - 24.7 oz
- Onion - 1 piece
- Garlic - 2 cloves
- Olive Oil - 2 tablespoons
- Chili jam - 1 teaspoon
- Worcestershire Sauce - 2 tablespoons
- Paprika - 1½ teaspoons
- Cream 22% - 3 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Sugar - to taste
- Chicken Broth - 5 fl oz
- Basil - 1 bunch
- Soy Sauce - 1 tablespoon
Step by Step guide
Step 1
Sauté the finely chopped onion and garlic over medium heat until soft. Add the tomato paste and sauté for a bit.
Step 2
Add the canned tomatoes (preferably peeled), basil, paprika, salt (start with a little), pepper, sugar, and chili paste. Bring to a boil, add the chicken broth, bring to a boil again, reduce the heat, add the soy sauce and Worcestershire sauce. Cover and cook for 10 minutes.
Step 3
Using an immersion blender, puree the contents of the pot or transfer to a blender, then pour back into the pot. Cook for another 5–7 minutes over low heat.
Step 4
Pour in the cream, stir, taste the soup, and add more salt, pepper, or sugar if necessary. Bring to a boil and cook for a couple more minutes.
Step 5
Ladle into bowls, add a basil leaf to each bowl, and drizzle with a couple of drops of olive oil.
