Ingredients
- Olive Oil - 2 tablespoons
- Onion - 1 head
- Chili Flakes - 1 tablespoon
- Water - 1½ cups
- Basil - 0.2 oz
- Spiced Tomato Juice - 28.2 oz
- Salt - 2 teaspoons
- White bread - 4 pieces
- Balsamic Vinegar - 1 tablespoon
- Butter - 2 tablespoons
- Ground Black Pepper - to taste
- Hard Cheese - 3.9 oz
Step by Step guide
Step 1
Heat the oil in a deep skillet over medium heat. Sauté the onion with the red pepper flakes, stirring occasionally, until the onion becomes translucent and starts to brown (about 10 minutes).
Step 2
Add the tomatoes (with juice) to the onion, pour in the water, and bring everything to a boil. Reduce the heat and let it simmer for 30 minutes, stirring occasionally. Then add the basil, salt, and vinegar. Remove from heat and let cool slightly for about 5 minutes.
Step 3
Set a fine sieve or colander over a heatproof bowl. Use an immersion blender to puree the soup until smooth. Then strain it through the colander, using a spoon to help. Taste the soup and add more salt or vinegar if needed.
Step 4
Make 2 sandwiches from the bread. Place cheese between 2 slices of bread and generously spread melted butter on the outside. Fry the sandwiches on both sides until golden brown and the cheese melts. Let the prepared sandwiches sit for 1-2 minutes, then cut them into small pieces, the size of croutons.
Step 5
If necessary, reheat the soup, pour it into bowls. Garnish with croutons and fresh basil. Add pepper.
