Ingredients
- Onion - 3 pieces
- Courgette - 24.7 oz
- Potato - 1 piece
- Tomatoes - 8.1 oz
- Butter - 3.9 oz
- Cardamom - 3 pieces
- Black Cumin (Cumin) - 1 teaspoon
- Fennel - 1 teaspoon
- Coriander essential oil - 0 oz
- Basmati rice - 2.8 oz
- Chicken Broth - 28 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a 3.5-liter pot, sauté the onion in butter until golden brown.
Step 2
In a skillet, toast the cardamom, cumin, fennel, and coriander seeds (3 minutes). Crush them in a mortar and sprinkle over the onion.
Step 3
Add the zucchini, potato, and tomatoes. Season with salt and pepper to taste and cook on low heat for 20 minutes.
Step 4
Place the mixture in a blender and blend until smooth.
Step 5
Return the puree to the pot, add hot broth and rice.
Step 6
Keep on low heat for 5 minutes.
Step 7
Serve with crispy croutons.
