- Water - 3 qt
- Watermelon - 6 cups
- Sugar - 1 cup
- Apple Cider Vinegar - 1 cup
- English Dry Mustard - 1½ tablespoons
- Turmeric - 2 teaspoons
- Grated Ginger Root - 1½ teaspoons
- Salt - ½ teaspoon
- Celery salt - ½ teaspoon

Step 1
Cut the watermelon rinds (only the white part, not the green) into very thin strips and place them in a pot of boiling water. Boil for 3 minutes, then drain.
Step 2
In a skillet, combine sugar, vinegar, mustard, turmeric, ginger, salt, and celery seeds. Bring to a boil, reduce heat, and simmer for 2 minutes, stirring. Add the watermelon rinds and cook uncovered for 30 minutes, until all the liquid evaporates. Cool and transfer to a container.
