Ingredients
- Onion - 1 piece
- Young zucchini - 2 pieces
- Carrot - 1 piece
- Celery stalk - 2 pieces
- Vegetable Oil - 2 tablespoons
- Cilantro - 1 bunch
- Thyme - to taste
- Passata Tomato Sauce - 1 tablespoon
- Paprika - 1 teaspoon
- Ground Black Pepper - to taste
- Salt - to taste
- Red Long Chili Peppers - to taste
- Garlic - 5 cloves
Step by Step guide
Step 1
Immerse the tomatoes in boiling water for a couple of minutes, making a cross-shaped cut on the rounded end beforehand. Remove the skin, cut into segments, and remove the seeds. Dice the flesh into small cubes.
Step 2
Cut the zucchini into 1–2 cm cubes. Finely chop the cilantro. Mince the onion, carrot, and celery.
Step 3
Heat the oil in a deep skillet, add the onion, carrot, and celery. Sauté until soft.
Step 4
Add the tomatoes and simmer for a couple more minutes. Add the cilantro, thyme, and paprika, and squeeze in the garlic.
Step 5
Mix everything together and add the zucchini. Season with salt and pepper. Simmer on low heat for about 10 minutes, then add the tomato paste and cook for another 10 minutes.
Step 6
Cool down and blend in a blender.
