Description
To make a creamy spinach soup, add 300 ml of cream or a little regular milk. Instead of sherry, you can use rice wine.
Ingredients
- Safflower Oil - 2 tablespoons
- Onion - 1 piece
- Garlic - 3 cloves
- Grated Ginger Root - 1 teaspoon
- Young Spinach "Belaya Dacha" - 8.8 oz
- Potato - 1 piece
- Chicken Broth - 1 qt
- Medium-dry sherry - 1 tablespoon
- Sesame Oil - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat the sunflower oil in a large pot. Peel and finely chop the onion, garlic, and ginger. Add them to the oil and sauté for about 3–4 minutes until soft.
Step 2
Pour in the broth.

Thoroughly rinse the spinach under warm water, sort it, and dry it on a paper towel. Set aside a few small spinach leaves. Add the remaining spinach to the pot and stir until it wilts.
Step 4
Add the peeled and finely chopped potato to the broth, bring to a boil. Reduce the heat, cover, and simmer for about 10 minutes.
Step 5
Using a blender or mixer, puree the soup. Add the rice wine or dry sherry, then season to taste with salt and pepper. Bring to a boil.
Step 6
Chop the reserved spinach leaves and sprinkle them on top. Before serving, drizzle the finished soup with a few drops of sesame oil.
