- Butter - 2 tablespoons
- Shallot - 1 piece
- Pickled Chanterelles - 10.6 oz
- Fresh basil leaves - 14.1 oz
- Truffle Oil - 2 teaspoons
Step by Step guide
Step 1
Melt the butter in a large skillet over medium heat. Add the sliced mushrooms and sauté for about 8 minutes until golden brown, until all the liquid has evaporated. Then add the finely chopped shallot and sauté for 2 minutes.
Step 2
Add the spinach in 3 batches, waiting 2 minutes between each addition, stirring well each time. Cook until all the spinach is wilted, then add 1 teaspoon of truffle oil. Season with salt and pepper and add more truffle oil to taste. Transfer to a bowl and serve.
