The key is to remember that you are not making a stew, but rather a kind of marriage, where it is important to respect the interests of both parties involved in the process.

- Salt - to taste
- Ocean salt - 0 oz
- Olive Oil - 0 fl oz
- Artichoke bottoms - 1.8 oz
- Squid - 4.2 oz
Step by Step guide
Step 1
Prepare the ingredients for cooking. Remove the membranes and tiny bones from the squid bodies. It's best to clean the squid under cold running water, as it makes the process easier. Cold water greatly facilitates all anatomical operations.
Step 2
For the artichoke, remove all the outer leaves — we will only need the tender heart. Cut the heart into pieces.
Step 3
Heat two frying pans. Sauté the squid and artichokes separately in olive oil. Season lightly with salt and pepper, being careful not to overdo it. Cook the ingredients gently as well. The squid should be cooked for no more than 30 seconds; otherwise, it will become rubbery in texture. You should spend about the same amount of time on the artichoke.
Step 4
Place the artichokes in the center of a large plate, and top them with the squid. Surround the edge of the plate with coarse sea salt.
