Description

Bulgarian street food sold at resorts on every corner straight from grills and barbecues. In Sofia and the surrounding areas, sandwiches with minced meat proudly bear the name 'Princesses' (for some reason, Bulgarians like to give this title to food; a popular salad with ham is also called 'Princess'). Closer to the sea, in Burgas and Varna, they are known as Strandzhanki, named after the Strandzha mountain range. The secret to delicious Strandzhanki is simple: don’t skimp on the minced meat; it should rise above the bread in a generous mound, barely covered with slices of sweet pepper. At the end of the cooking process, turn on the top grill in the oven — this will give the minced meat a golden crust while keeping it juicy inside.
