Stuffed Artichokes with Chicken and Almonds
Ingredients
- Marinated mini artichokes - 17.6 oz
- Ground meat - 8.8 oz
- Spanish onions - 1 head
- Garlic - 2 cloves
- Chopped almonds - 4 tablespoons
- Lemon - 1 piece
- Grated Pecorino Pepato Cheese - 3 tablespoons
- Butter - 1 tablespoon
- Edam Cheese - 1.1 oz
- Ocean salt - a pinch
- Ground Nutmeg - ½ teaspoon
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Pour 3 cups of water into a pot, once it boils, add salt, lemon juice, place the artichokes in and boil for 15 minutes until tender, then drain and cool.
Step 2
In a skillet, sauté the onion and garlic in butter until golden, add the ground chicken, stirring constantly, and cook for 5 minutes, then add the almonds and spices, cooking for another 5–7 minutes, then add the Parmesan cheese and mix.
Step 3
Stuff the artichokes with this filling.
Step 4
Grease a clay baking dish with olive oil, place the stuffed artichokes in it, and bake in the oven for 15–20 minutes.
Step 5
Sprinkle the finished artichokes with Edam cheese. Serve with tartar sauce, soy sauce, and salad.
