Stuffed flatbreads with fresh herbs
Ingredients
- Wheat Flour - 2 glasses
- Water - ½ glasses
- Salt - ½ spoons
- Herbs - 3.5 oz
Step by Step guide
Step 1
In a bowl with flour, add half of the warm water and salt, and mix with a fork. Continue adding the remaining warm water while stirring constantly. Transfer to a floured surface and knead into a firm dough. Cover it and let it rest for half an hour.
Step 2
Chop the herbs and mix them well; any fresh herbs will work for the kuftas — parsley, dill, cilantro, basil, sorrel, green onions, etc., so feel free to experiment. If desired, you can also add feta or brined cheese to the filling.
Step 3
Divide the dough into 4 equal parts, rolling each one out into a thin pancake. Place herbs on one half of the pancake and season with salt. Then, fold it in half and seal the edges using your fingers or a fork, making sure there is no air left inside.
Step 4
Preheat a large skillet over high heat and dry-fry the qutab for 2–3 minutes on each side. Remove the qutab from the heat and place a piece of butter on top of each one. Serve immediately with yogurt or sour cream.
