The mushroom is a superhero in its family of fungi. It is versatile, accessible, and pairs well with almost any ingredient. Mushrooms can be eaten raw, sautéed, boiled, baked, and in any other way. However, they are best stuffed with onions, cream cheese, and Parmesan, as in this recipe, and then baked in the oven. It is important to remember that mushrooms absorb moisture quickly, so it's advisable not to soak them for too long. It's preferable to clean them while dry, removing the skin with a knife.
Ingredients
- Champignons - 15 pieces
- Garlic - 2 cloves
- Vegetable Oil - 1 fl oz
- Semi-soft cream cheese - 7.1 oz
- Breadcrumbs - 0.7 oz
- Grated Pecorino Pepato Cheese - 2.1 oz
- Parsley - 0.4 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Remove the stems from the champignon mushrooms and set the caps aside.
Step 2
Chop the mushroom stems into small cubes.
Step 3
Chop the garlic and parsley.
Step 4
Heat vegetable oil in a frying pan.
Step 5
Sauté the mushroom legs until golden brown.
Step 6
Add the minced garlic and sauté, stirring, for another 30 seconds. Remove from heat.
Step 7
Combine the sautéed chicken legs with cream cheese, chopped parsley, half of the grated Parmesan cheese, and breadcrumbs. Season with salt and pepper to taste.
Step 8
Fill the mushroom caps with the filling.
Step 9
Sprinkle the mushrooms with the remaining cheese and place them in the oven preheated to 356°F for 20 minutes.
