Description
Choose small and very young fruits. If the young ones have grown too large, reduce the number of fruits according to the amount of filling, and do not add the flesh with large seeds to the mushrooms.

- Pattypans - 10 pieces
- Fresh Mushrooms - 10.6 oz
- Butter - 3 tablespoons
- Onion - 2 heads
- Salt - to taste
- Vegetable Oil - 2 tablespoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prick the pattypans and immerse them in boiling salted water for 15 minutes. Use a slotted spoon to remove the fruits and place them in cold water.
Step 2
Cut the tops off the pattypans, carefully scoop out the flesh, and chop it.
Step 3
Dice the onion and sauté it in butter until it darkens.
Step 4
Chop the mushrooms and fry them until golden in vegetable oil, then add the chopped pattypan flesh to the skillet and heat through.
Step 5
Combine the onion and mushroom mixture. Season with salt and pepper.
Step 6
Stuff the pattypans with the mixture and place them in a greased baking dish with high sides. Cover with the tops. Add half a cup of water or broth and simmer in the oven for 30 minutes.
