Stuffed Peppers with Tuna and Capers
Ingredients
- Canned Mackerel in Oil - 1 can
- Orange Bell Peppers - 4 pieces
- Mild Chili Spice - ½ piece
- Chopped Sage Leaves - 2 tablespoons
- Pickled capers - 2 teaspoons
- Ground Black Pepper - to taste
- Meyer Lemon Juice - 3 tablespoons
Step by Step guide
Step 1
Carefully remove the stems and seeds from the peppers, rinse them, and place them in the microwave for 3-4 minutes (or dip them in boiling water for 8-9 minutes). Remove and plunge into ice water. Gently peel the skin off without damaging the cone shape.
Step 2
Prepare the filling: mix the tuna, chili, capers, and chopped parsley. Season with ground pepper and lemon juice.
Step 3
Stuff the peppers with the fish filling and chill.
