Summer Fresh Gazpacho
Ingredients
- Orange Bell Peppers - 2 pieces
- Orange Bell Peppers - 2 pieces
- Tomatoes - 5 pieces
- Courgette - 1 piece
- Sweet Red Onion - 2 pieces
- Celery stalk - 1 bunch
- Garlic - 4 cloves
- Parsley - ½ bunch
- Fresh Mint - 1 bunch
- Fresh basil leaves - 1 bunch
- Olive Oil - 3 fl oz
- Apple Cider Vinegar - 2 tablespoons
- Crushed ice - to taste
- Spiced Tomato Juice - 1 qt
Step by Step guide
Step 1
Dice all the ingredients (peppers, tomatoes, cucumbers, herbs, etc.) and mix them in a large bowl.
Step 2
In a blender, crush the ice with the tomato juice and add the olive oil (you can also substitute with filtered sunflower oil — to taste) and apple cider vinegar. Add salt and pepper to taste.
Step 3
Add the vegetable and herb mixture to the blender and blend everything very well together.
Step 4
Serve the soup very well chilled, especially on hot days. You can garnish with a few cubes of finely chopped vegetables and herb leaves.
