Summer Pea Soup with Spaghetti
Ingredients
- Onion - 1 head
- Olive Oil - 1 fl oz
- Green Peas - 10.6 oz
- Chicken Broth - 37 fl oz
- Spaghetti - 7.9 oz
- Fresh Mint - 1 sprig
- Basil - 1 sprig
- Rosemary - 1 sprig
- Parsley - 3 sprigs
- Olive Oil - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel and finely chop the onion. Pour olive oil into a pan, add the onion, and sauté slowly for 10 minutes.
Step 2
Add the peas and chicken broth, bring to a boil, and simmer for about 10 more minutes.
Step 3
Break the spaghetti into pieces about 2.5 cm long. Bring a pot of salted water to a boil and cook the spaghetti for half the time indicated on the package, then drain the water and add them to the pea soup until cooked.
Step 4
Tie all the sprigs of herbs together, except for the parsley, and place them in the soup to give it a pleasant aroma. Be sure to remove this bouquet before serving.
Step 5
When the pasta is cooked, taste the soup and season with sea salt and black pepper to taste.
Step 6
Chop the parsley leaves and ladle the soup into bowls. Drizzle with a little extra virgin olive oil and sprinkle with parsley.
