Description

You can use any tomatoes, preferably a variety of different kinds.

Ingredients

  • Tomatoes - 17.6 oz
  • Olive Oil - 3 fl oz
  • Garlic - 2 cloves
  • Thyme - to taste
  • Sugar - to taste
  • Salt - to taste
  • Ground Black Pepper - to taste

Blanch the tomatoes in boiling water, then transfer them to cold water and peel off the skins. Cut the large tomatoes into wedges and the small ones in half.

Dress the chopped tomatoes with olive oil and sugar.

Place on a baking sheet drizzled with oil, add a few slices of garlic and sprigs of thyme, and transfer to a dehydrator for 3 hours or to an oven preheated to 158°F for 6 hours.
