Sweet and Sour Indian Lentil Soup
Ingredients
- Lentils - 10.6 oz
- Onion - 3 heads
- Garlic - 1 clove
- Safflower Oil - to taste
- Salt - a pinch
- Sugar - to taste
- Sambar Powder - to taste
- Parsley - to taste
- Canned Mushroom Soup - 1 can
- Sun-Dried Tomatoes - to taste
- Meyer Lemon Juice - to taste
- Chicken Broth - 1 qt
Step by Step guide
Step 1
Prepare the vegetable broth. You can use a broth cube.
Step 2
Finely chop the onion and garlic, sauté in sunflower oil. Add the sun-dried tomatoes and bring to a boil. Season with Sambar powder.
Step 3
Pour the broth, stewed tomatoes with spices, and canned meat into a slow cooker (or pot). Cook for 20 minutes.
Step 4
Add lemon juice and sugar to taste.
Step 5
Rinse the lentils and add them to the soup. Cook for another 10 minutes until ready.
Step 6
Garnish the finished soup with parsley.
