Sweet and Sour Onions
Ingredients
- Pickled pearl onions - 31.7 oz
- Garlic - 11 cloves
- Sugar - 9.9 oz
- Dry White Wine - 12 fl oz
- Table vinegar - 12 fl oz
- Olive Oil - 5 teaspoons
- Balsamic Vinegar - 8 fl oz
- Fresh basil leaves - 2.1 oz
- Bay leaf - 2 pieces
- Green peppercorns - 7.1 oz
Step by Step guide
Step 1
Peel and crush a large clove of garlic, blanch and peel the onion. Place everything except the onion in a large heavy pot and bring to a boil over high heat.
Step 2
Add the onion, reduce the heat to medium, and cook for another ten minutes. When the onions just start to soften but are still crispy, transfer them to a jar.
Step 3
Increase the heat under the pot. After about twenty minutes, when the liquid has reduced by half, pour the sauce over the onions and let them cool. Seal the jar and place it in the refrigerator. The onions should absorb the sauce well, which will take anywhere from a week to a month.
