Ingredients
- Balsamic Vinegar - 1 cup
- Agave Syrup - 1 fl oz
- Olive Oil - 3 tablespoons
- Red Onion - 1 head
- Baguette - 1 piece
- Potato - 3.5 oz
- Shallot - 2 heads
- Ground Cumin - 1 teaspoon
- Ground red pepper - ¼ teaspoon
- Minced garlic - 1 clove
- Vegetable Broth - 6 cups
- Red Bell Pepper - 2 pieces
Step by Step guide
Step 1
To prepare the balsamic sauce: Bring the vinegar and agave nectar to a boil in a small skillet. Reduce the heat and let it simmer for 15 minutes or until thickened. Cool.
Step 2
To prepare the soup: Heat the oil in a large pot over medium heat. Add the red onion, baguette, potato, shallot, and sauté for 5–7 minutes. Add the cumin, red pepper, and garlic. Sauté for 3–5 minutes. Add the vegetable broth and bell pepper, and bring to a boil.
Step 3
Simmer for 30 minutes or until the potato and pepper are tender. Puree in batches in a blender. Add salt and pepper to taste.
Step 4
Before serving, drizzle with balsamic sauce.
