Sweet Pepper Confit with Lemon
Ingredients
- Orange Bell Peppers - 4 pieces
- Olive Oil - 1½ tablespoons
- Shallot - 5.3 oz
- Dry White Wine - 1 cup
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Lemon - 1 piece
Step by Step guide
Step 1
Remove the seeds from the peppers. Cut into thin strips.
Step 2
Peel the shallots and slice them into thin rings.
Step 3
Heat the olive oil in a large skillet over medium heat. Add the shallots and sauté until golden, about 15–20 minutes. Then add the red peppers and wine. Season with salt and pepper. Cover and cook until the liquid evaporates, about 20 minutes, stirring occasionally. Uncover and reduce the heat. Cook, stirring, for about 15 minutes until the peppers are soft.
Step 4
Meanwhile, using a sharp knife, cut the lemon zest into thin strips. Remove the white membranes and carefully cut out the segments. Cut each segment in half.
Step 5
Add the lemon segments and zest to the peppers. Mix and serve.
