Sweet Pepper Soup with Roasted Garlic

Ingredients

  • Sweet Pepper - 2 pieces
  • Tomatoes - 26.5 oz
  • Spanish onions - 1 head
  • Garlic - 6 cloves
  • Olive Oil - 2 spoons
  • Chicken Broth - 20 fl oz
  • TABASCO® - to taste
  • Fresh basil leaves - to taste
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Cut the tomatoes in half and slice the onion into large segments.

Step 2

Place the peppers on one baking sheet, and the tomatoes, onions, and garlic on another.

Step 3

Drizzle the tomatoes with onions and garlic with olive oil and cover with foil. Place both trays in the oven for 35–40 minutes, until the skin on the peppers is nicely charred and the other vegetables are soft. Let cool slightly.

Step 4

Remove the skins and seeds from the peppers and tomatoes.

Step 5

Combine all the vegetables in a food processor, add the broth, and blend everything until smooth. Add a dash of Tabasco.

Step 6

Ladle the soup into bowls, sprinkle with basil leaves, drizzle with oil, season with freshly ground black pepper, and serve.
