Sweet Potato and Orange Cream Soup
Ingredients
- Butter - 0.7 oz
- Onion - 2 heads
- Garlic - 3 cloves
- Sweet Potato - 2 lbs
- Orange juice concentrate - 17 fl oz
- Chicken Broth - 25 fl oz
- Orange zest - 1 piece
- Cream - 7 fl oz
- Powdered Sugar - to taste
Step by Step guide
Step 1
Preheat the oven to 248°F.
Step 2
Melt the butter in a pan and sauté the finely chopped onion until soft. Add the garlic, sauté for 1 minute, then add the finely chopped sweet potato, orange juice, and broth. Simmer for 1 hour and 40 minutes.
Step 3
Meanwhile, slice the orange very thinly. Lightly grease parchment paper with butter and sprinkle with powdered sugar. Arrange the orange slices on top and sprinkle with more sugar. Bake for 1 hour.
Step 4
Slice 1 small sweet potato into thin slices and fry until cooked in butter.
Step 5
When the stewed sweet potato is soft, add the cream and blend until smooth.
Step 6
Serve with orange slices and potato chips.
