- Onion - 1 head
- Vegetable Oil - 1 tablespoon
- Red Curry Powder - 2 teaspoons
- Chicken Broth - 1 qt
- Cilantro - to taste
- Coconut Milk - 3 fl oz
- Sweet Potato - 26.5 oz
Step by Step guide
Step 1
Heat the vegetable oil in a pot and sauté the finely chopped onion until soft for 4-5 minutes. Add the curry paste and sauté for another minute until fragrant.
Step 2
Add the grated sweet potato and broth. Bring to a boil, reduce the heat, and cook for 5 minutes until the sweet potato is tender.
Step 3
Remove from heat, add the coconut milk, season with salt and pepper, and blend until smooth with an immersion blender. Sprinkle with cilantro and serve.
