Sweet Potato Cream Soup with Thyme
Ingredients
- Ground Black Pepper - to taste
- Garlic - 2 heads
- Olive Oil - 4 tablespoons
- Onion - 1 head
- Celery stalk - 2 pieces
- Mild Chili Spice - 1 piece
- Sweet Potato - 3 lbs
- Thyme - 3 sprigs
- Chicken Broth - 1 qt
- Salt - to taste
- 33% Cream - 9 fl oz
Step by Step guide
Step 1
Preheat the oven to 338°F. Cut the ends off the heads of garlic and mix with 1 tablespoon of olive oil. Wrap each head in a piece of foil. Place on a baking sheet and roast for about 1 hour until soft. Cool and squeeze the flesh of the garlic from each clove into a bowl.
Step 2
Meanwhile, in a pot, sauté the finely chopped onion, finely chopped celery, and minced small chili in olive oil until soft. Add the peeled and diced sweet potato and cook, stirring, for 10-15 minutes. Add the roasted garlic, thyme, and broth. Bring to a boil, season with salt, reduce the heat, and cook for 25 minutes.
Step 3
Remove the thyme sprigs and blend the soup in a blender until smooth. Pour into a clean pot. Add the cream, season with salt and pepper. Warm slightly and serve.
