Sweet Potato Gratin with Cream and Parmesan

Ingredients

  • Butter - 3 tablespoons
  • Sweet Potato - 4 lbs
  • Cream (40%) - 2 cups
  • Grated Pecorino Pepato Cheese - 3.2 oz
  • Salt - 1 teaspoon
  • Ground Black Pepper - ½ teaspoon
  • Cayenne Pepper - ¼ teaspoon

Step by Step guide

Step 1

Preheat the oven to 392°F.

Step 2

Peel the sweet potato and slice it thinly using a mandoline.

Step 3

Grease a rectangular baking dish with 1 tablespoon of butter.

Step 4

Layer one third of the sweet potato in the bottom of the dish. Sprinkle with 0.25 cups of Parmesan. Repeat the layers two more times with the remaining sweet potato.

Step 5

In a small bowl, mix the cream, salt, pepper, and cayenne pepper. Pour over the potatoes. Dot with pieces of butter, cover with foil, and bake for 20 minutes.

Step 6

Remove the foil and bake for another 20-25 minutes until golden brown.
