Ingredients
- White Beans - 15.9 oz
- Olive Oil - 2 tablespoons
- Red Bell Pepper - 1 piece
- Onion - 8.5 oz
- Potatoes - 19.8 oz
- Minced garlic - 2 cloves
- Vegetable Broth - 4 cups
- Ground Nutmeg - ¼ tablespoon
- Swiss chard leaves - 24.7 oz
Step by Step guide
Step 1
Mash ¾ cup of the beans with a fork until it becomes a paste, set aside.
Step 2
Heat the oil in a large pot over medium heat. Add the bell pepper, onion, salt, and pepper to taste. Sauté for 5 minutes until softened.
Step 3
Add the potatoes and cook for another 10 minutes until softened. Add the garlic and cook for another 2 minutes.
Step 4
Pour in the broth, 1 cup of water, add the mashed and whole beans, nutmeg, and bring to a boil. Reduce the heat to medium and let simmer for 12-15 minutes.
Step 5
Add the Swiss chard, salt, and pepper to taste. Let simmer for 5 minutes until the chard is softened.
