Swiss Chard with Raisins and Pine Nuts
Ingredients
- Swiss chard leaves - 24.7 oz
- Pistachios - 2.6 oz
- Olive Oil - ¼ cup
- Onion - 1 head
- Salt - to taste
- Light Raisins, Seedless - 1.8 oz
- Ground Black Pepper - to taste
- Water - 1 cup
Step by Step guide
Step 1
Rinse the Swiss chard well. Cut the stems into small pieces and place them in a bowl. Cut the leaves separately and place them in a second bowl.
Step 2
In a well-heated skillet, toast the pine nuts over medium heat until golden brown.
Step 3
Reheat the skillet with olive oil and sauté the finely chopped onion until translucent. Add the Swiss chard stems and cook, stirring, for 3-4 minutes. Add the raisins and half of the water, cover, and cook on low heat for 4-5 minutes until tender.
Step 4
Add the leaves, increase to medium heat, and cook for another 4 minutes until tender. Season with salt and pepper, plate, sprinkle with pine nuts, and serve at room temperature.
