Ingredients
- Butter - 2 tablespoons
- Stale Bread - 2 pieces
- Chicken Broth - 1 qt
- Cream - 1 cup
- Grated Pecorino Pepato Cheese - 8 tablespoons
- Chopped Sage Leaves - 2 tablespoons
- Ground Caraway - ½ teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the slices of white bread, preferably slightly stale, into small cubes with a sharp knife and fry in well-heated butter in a skillet until golden brown.
Step 2
Add a little caraway seeds to the prepared meat broth and bring the broth to a boil over heat, then simmer for about 10 minutes.
Step 3
Next, add the cream and stir well. Immediately remove the boiling broth with cream from the heat and, stirring gently, add the grated cheese.
Step 4
Season the soup with salt and pepper to taste.
Step 5
Finely chop the fresh parsley with a sharp knife.
Step 6
Pour the finished soup into bowls, serve hot, garnished with parsley and with some previously prepared croutons in each bowl.
