Description

For different fillings, you can try various crackers or a slightly toasted baguette in the oven or on the grill. Foie gras mousse can be found in stores. In English, we would call this a pâté. The French sometimes refer to finely whipped pâtés as 'mousses.' Foie gras mousse typically consists of goose, duck, and chicken liver, pork, and fat in various proportions, along with additions like raisins and figs, or truffles and alcohol. If you have frozen red currants left over from the summer season, feel free to serve them with this mousse.

Ingredients

  • Crackers - 12 pieces
  • Arugula - 0.7 oz
  • Sun-Dried Tomatoes - 2 pieces
  • Goat cheese - 1.8 oz
  • Fresh Berries - 12 pieces
  • Garlic - 1 clove
  • Dried Apricots - 1 piece
  • Ground Black Pepper - to taste
  • Pink Himalayan Salt - to taste
  • Foie Gras - 2.5 oz

Step by Step guide

Step 1

For the tapas with goat cheese, spread a thin layer of cheese on each cracker and place 3 blueberries on top.

Step 2

For the tapas with tomatoes and arugula, crush or grate the garlic, and mix the oil from the tomatoes with the garlic. Spread this mixture on the cracker, then add arugula and tomato, generously seasoning with salt and pepper.

Step 3

For the tapas with foie gras and fig, slice the fig into thin pieces. The foie gras mousse should be chilled; slice the mousse and place the fig and mousse on top of the cracker.
