Tarte Tatin with Herring

Ingredients

  • Puff Pastry - 17.6 oz
  • Herring - 2 lbs
  • Salt - to taste
  • Ground Black Pepper - a pinch
  • Pitted olives - 10 pieces
  • Olive Oil - 0 fl oz
  • Chicken Egg - 1 piece
  • Sun-Dried Tomatoes - 10 pieces

Step by Step guide

Step 1

Fillet the herring — remove the backbone and trim the fins and tail.

Step 2

Sauté the herring — in a shallow baking dish, pizza pan, or skillet, add olive oil and arrange the herring beautifully from the center to the edge, skin side down, lightly sauté, add chopped olives and sun-dried tomatoes (garlic can be added).

Step 3

Bake — cover the dish with puff pastry, tuck the edges of the pastry into the dish, and brush the pastry with an egg beaten with water. Place in the oven at 356°F for 20 minutes.

Step 4

Serve — flip the resulting pie onto a flat plate, it can be served with crème fraîche.
