- Olive Oil - 2 tablespoons
- Shortcrust Cake Mix - 8.8 oz
- Spanish onions - 2 pieces
- Garlic - 1 clove
- Chopped Sage Leaves - 1 teaspoon
- Brown Sugar - 1 teaspoon
- Champagne Vinegar - 1 teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
- Brie cheese - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
On a floured surface, roll out the pastry to 0.25 cm thick and cut out 24 circles, each 5 cm in diameter.
Step 3
Place the circles on a baking sheet and prick them in several places with a fork.
Step 4
Bake for 10–12 minutes until cooked and golden brown. Let cool.
Step 5
Meanwhile, heat the olive oil in a skillet over medium heat and sauté the thinly sliced onion until soft over low heat for about 15 minutes, stirring.
Step 6
Increase the heat and add the thinly sliced garlic and thyme. Cook for another 5 minutes.
Step 7
Add the vinegar and sugar to the onions and cook, stirring, until the onions are caramelized. Season with salt and pepper.
Step 8
Cut the brie into 24 pieces.
Step 9
Top each pastry circle with a bit of onion, then place a piece of cheese on top.
