Ingredients
- Chicken Liver - 17.6 oz
- 10% cream - 5 fl oz
- Quail Egg - 10 pieces
- Marinated cherries - 10 pieces
- Herbs - to taste
- Spices - to taste
- Tartlets - 20 pieces
Step by Step guide
Step 1
Finely chop the herbs.
Step 2
Sauté the onion in vegetable oil.
Step 3
Add the liver. Fry, stirring, for 15–20 minutes. Let it cool.
Step 4
Place the cooked liver in a blender, add the cream, and blend everything. If you don't have a blender, you can pass the liver through a meat grinder, then add the cream and mix.
Step 5
Add the herbs to the liver, season with salt and pepper, and mix.
Step 6
Cut the cherry tomatoes and eggs in half.
Step 7
Fill the tartlets with the liver mousse (using a pastry syringe or a spoon).
Step 8
It is preferable to use small tartlets. Instead of cherry tomatoes, you can use regular tomatoes cut into small pieces, and instead of quail eggs, you can use chicken eggs.
