Ingredients
- Butter - 3.5 oz
- Wheat Flour - 6.2 oz
- English Dry Mustard - ½ teaspoon
- Cheshire Cheese - 1.8 oz
- Chicken Egg - 1 piece
- Balsamic Vinegar - 6 tablespoons
- Spanish onions - 31.7 oz
- Goat cheese - 7.8 oz
- Sage - 2 teaspoons
- Chopped Sage Leaves - 8 pieces
- Olive Oil - 0 fl oz
- Cayenne Pepper - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - 0.7 oz
Step by Step guide
Step 1
Mix the flour with 75 g of softened butter, add finely grated parmesan, mustard, a pinch of cayenne pepper, and 1 tablespoon of cold water. Knead into a uniform dough, place it in a plastic bag, and refrigerate for 20 minutes.
Step 2
Roll out into a thin layer and cut out eight circles. Place them in greased tartlet molds. Bake for 15-20 minutes at 356°F, then transfer to a rack to cool.
Step 3
Prepare the filling. Peel and slice the onion thinly. In a saucepan, melt 25 g of butter, add the onion, balsamic vinegar, and chopped sage, season with salt and pepper. Cook on low heat for 30 minutes, stirring constantly, until the liquid evaporates. Let cool.
Step 4
Brush the tartlets with beaten egg and place in the oven for 5 minutes.
Step 5
Cut the goat cheese into 8 pieces.
Step 6
Fill the tartlets with the onion mixture, top with a slice of goat cheese and a sage leaf brushed with olive oil. Sprinkle with cayenne pepper and bake for 20 minutes.
