Tender Pork Belly with Garlic and Spices
Ingredients
- Salted pork belly - 17.6 oz
- Garlic - 1 head
- Salt - 5 tablespoons
- Paprika - 1 teaspoon
- Bay leaf - to taste
- Allspice berries - 5 pieces
- Grill Meat Spice Blend - to taste
- Water - 1 qt
- Cardamom - ½ teaspoon
- Cardamom - ½ teaspoon
Step by Step guide
Step 1
Cut the pork belly into large pieces.
Step 2
Boil 1 liter of water and add 5 tablespoons of salt.
Step 3
Add whole cardamom.
Step 4
Add bay leaf.
Step 5
Add allspice berries.
Step 6
Allow the brine with spices to cool completely.
Step 7
Place the pork in the brine, cover with a plate or saucer, and weigh it down so that all pieces are fully submerged. Leave in the refrigerator for 12 hours (it's convenient to do this in the evening).
Step 8
Boil the pork belly in the same brine for 10–15 minutes, then cool in it.
Step 9
In a bowl, combine minced garlic, paprika, ground cardamom, crushed dry bay leaf, and meat or pork spices.

Mix well.
Step 11
Pat the pork belly dry with a paper towel.
Step 12
Thoroughly coat with the garlic spice mixture on all sides.
Step 13
Wrap in foil and place in the freezer for 30 minutes.
Step 14
Before serving, remove from the freezer and slice thinly.
