- Water - 2 qt
- Skin-On Chicken Breasts - 2 pieces
- Onion - 1 piece
- Cilantro - 1 bunch
- Salt - to taste
- White Pepper (whole) - to taste
Step by Step guide
Step 1
Place the chicken in a deep pot and cover with cold water.
Step 2
Bring to a boil, skimming off the foam from the surface (the foam is coagulated protein; to avoid wasting the product, you can first sauté or roast the breast).
Step 3
Reduce the heat, add the remaining ingredients, and simmer for 2–3 hours on low heat.
Step 4
Use only the stems of the cilantro.
