Thai Seafood Soup
Ingredients
- Carrot - 1 piece
- Celery stalk - 2 stalks
- Leek - 1 piece
- Lemon - ½ piece
- Seafood cocktail - 10.6 oz
- Coconut Milk - 1 cup
- Curry - ½ teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 2 tablespoons
- Canned Pineapple Chunks - 3.5 oz
- Paprika - to taste
- Water - 2 qt
Step by Step guide
Step 1
Place a pot of water on the stove and bring it to a boil.
Step 2
Meanwhile, slice the carrot and leek into rings. Chop the celery into small cubes. Sauté the vegetables in olive oil for 2–3 minutes.
Step 3
Add the seafood (I used a seafood cocktail) and diced pineapple to the pan with the vegetables. Sauté for another 3–4 minutes.
Step 4
Transfer the vegetables and seafood to the boiling water. Add the coconut milk, juice of half a lemon, and spices to taste.
Step 5
Cook the soup for about 7–10 minutes.
Step 6
Serve the soup in a bowl, garnished with chopped herbs and flakes of dried paprika.
