Description
You can substitute potatoes with sweet potatoes, and additionally add shrimp, mushrooms, carrots, or red bell peppers.
Ingredients
- Ginger Root - 1 teaspoon
- Cilantro - ½ bunch
- Garlic - 2 cloves
- Lime - 1 piece
- Red Onion - ½ piece
- Potatoes - 2 pieces
- Curry Powder - 1 teaspoon
- Water - 3 cups
- Coconut cream - 10 fl oz
- Fish Sauce - to taste
- Sriracha - to taste
- Rice Noodles - 3.5 oz
- Brown Sugar - 1 tablespoon
- Vegetable Oil - 2 tablespoons
Step by Step guide
Step 1
Grate the garlic and ginger.
Step 2
Chop the red onion, potatoes, cilantro, and lime.
Step 3
Add oil, garlic, ginger, and curry to the pot and sauté for two minutes.
Step 4
Add potatoes and water to the pot, bring to a boil, then simmer until the potatoes are soft.
Step 5
Cook the noodles, drain them, and rinse with cold water.
Step 6
Add coconut cream, fish sauce, and brown sugar to the pot, and stir.
Step 7
Divide the noodles into bowls, ladle the soup from the pot, top with red onion, cilantro, lime wedges, and drizzle with sriracha.
