Ingredients

  • Oxtail - 17.6 oz
  • Onion - 1 head
  • Celery salt - 2 stalks
  • Ground coriander - 6 stalks
  • Garlic - 6 cloves
  • Cinnamon - 1 piece
  • Star anise - 2 pieces
  • Lemongrass - 2 stalks
  • Sugar - 4.4 oz
  • Soy Sauce - 3 fl oz
  • Green peppercorns - 1 tablespoon
  • Carrot - 2 pieces

Step by Step guide

Step 1

Place all the ingredients (pre-cut) into a large soup pot, adding enough water to completely cover the oxtails (10–12 cm). Simmer on low heat for at least 3 hours, periodically checking the water level in the pot and adding more if necessary. By the end, you should have about 6 cups of broth.

Step 2

Remove the oxtails and strain the broth, keeping the onion, carrot, garlic, and spices. The broth can be frozen for use in other dishes or used immediately with the cooked vegetables.
