Ingredients
- Courgette - 2 lbs
- Chicken Thighs - 2 lbs
- Sweet Red Onion - 2 pieces
- Ginger - 0.4 oz
- Garlic - 6 cloves
- Tomatoes - 3 pieces
- Coconut Milk - 7 fl oz
- Orzo Pasta - 1.8 oz
- Lemongrass - 1 stalk
- Vegetable Oil - 3 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Parsley - 1 bunch
Step by Step guide
Step 1
Heat the oil in a saucepan and add the onion, sliced into half rings. Sauté for a few minutes, then add the peeled ginger and garlic.
Step 2
Remove the bones from the chicken thighs and cut the meat into large cubes. Sauté until golden brown.
Step 3
Add the zucchini, cut into cubes the same size as the meat. Season with salt and pepper, add the lemongrass. Simmer for about 5 minutes. During this time, some liquid will be released from the meat.
Step 4
Stir, add the coconut milk, bring to a boil, thicken with orzo pasta (or noodles) and simmer for the time indicated on the package.
Step 5
5 minutes before cooking is complete, add finely chopped sour tomatoes, and a couple of minutes before serving, add the chopped aromatic herbs. Parsley is the most neutral option. However, any herbs to your taste will work equally well.
