Ingredients
- Pea shoots - 2 cups
- Smoked pork knuckle - 3.5 oz
- Semi-Smoked Sausage - 1.8 oz
- Bay leaf - 1 piece
- Pork Blood - 3.5 oz
- Carrot - 1 piece
- Onion - 1 piece
- Salt - to taste
- Potato - 1 piece
- Passata Tomato Sauce - 1 teaspoon
- Green peppercorns - 5 pieces
Step by Step guide
Step 1
I take split yellow peas, rinse them, and soak them overnight (at least for 4 hours) in a 1:2 ratio. If cooking in a pressure cooker, soaking the peas is not necessary. Alternatively, you can rinse dry peas and pre-cook them for about 1-1.5 hours, maintaining the same proportions, adding water constantly to keep it two fingers above the level of the peas.
Step 2
We put a piece of meat with a bone, either pork or beef, to boil. Bring to a boil, and when foam appears, remove it. I drain the first broth, wash the piece of meat and the pot, and fill it with clean water. Add the rinsed meat, smoked ribs, sliced sausage, one whole carrot, and a bay leaf, and bring to a boil. Once boiling, reduce to the lowest heat. Skim off the foam (it will still form from the peas and ribs).
Step 3
Occasionally stir the peas, as they tend to stick to the bottom. Cook without a lid. The peas absorb a lot of water; if the liquid evaporates, add boiling water.
Step 4
After about 1.5 hours, finely chop one potato and add it to the soup.
Step 5
Finely chop the onion, remove the carrot from the soup, chop it finely as well, and sauté both in vegetable oil in a skillet until golden. Add a tablespoon of tomato paste, mix, and sauté slightly. By this time, the peas should be well cooked, and if there is too much liquid in the soup, add about one ladle of soup broth to the sauté. If there is little liquid in the soup, add boiling water to the sauté and simmer a bit until soft.
Step 6
After about 2 hours, check the meat; if it separates easily from the bone, remove it and discard the fat, then chop the meat. The ribs will fall apart on their own. Transfer the sauté to the soup.
Step 7
Cook everything together for another 10-20 minutes, adding the peppercorns.

Taste and salt if necessary. Enjoy your meal!
