Toast with Goat Cheese and Sauce
Ingredients
- Tomatoes - 6 pieces
- Olive Oil - 3 tablespoons
- Sun-Dried Tomatoes - 12 pieces
- Malt Vinegar - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
- Pesto - 5 tablespoons
- French Baguette - 1 piece
- Goat cheese - 6.2 oz
Step by Step guide
Step 1
Preheat the grill to maximum. Slice the fresh tomatoes and distribute them on four plates. Allow the oil to drain, cut the canned tomatoes into strips and place them on top of the fresh ones.
Step 2
Drizzle the tomatoes with oil and vinegar, season with salt and pepper to taste.
Step 3
For the toast, cut the baguette into diagonal slices – 12 pieces, each 2.5 cm thick. Spread red pesto on each slice, top each sandwich with a spoonful of goat cheese, and sprinkle with pepper.
Step 4
Place the toasts on the grill rack for two minutes.
Step 5
On each plate, place 3 toasts and a salad of tomatoes.
