Tomato and Potato Soup

Ingredients

  • Tomatoes - 17.6 oz
  • Potatoes - 12 pieces
  • Onion - 1 piece
  • Olive Oil - 2 tablespoons
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Wash and peel the potatoes, cut them into cubes, and place them in boiling salted water.

Step 2

Finely chop the onion and sauté it in olive oil in a pan until translucent.

Step 3

Add the crushed tomatoes to the pan with the onion and simmer for another 7 minutes over low heat.

Step 4

Mash the boiled potatoes directly in the water so that small pieces remain, but do not turn it into puree.

Step 5

Transfer the stewed tomatoes with onions into the pot with the boiled potatoes. Add water to reach the desired volume and thickness, season with salt if necessary, and add pepper to taste. If the tomatoes are sour, you can add a little sugar. Bring to a boil over low heat.

Step 6

When serving, add a few fresh basil leaves. Croutons can be served separately.
