Description

Fresh tomatoes are the perfect food to replenish lost minerals. They contain potassium (beneficial for the heart, helps eliminate excess fluid from the body), magnesium (helps the body adapt to cold), iron (recommended for anemia), zinc (necessary for the growth of skin cells, hair, and wound healing), calcium (strengthens bones), and phosphorus (involved in metabolic processes). Tomatoes are rich in organic acids, which are essential for our body to function properly. Tomatoes are also packed with vitamins — B1, B2, B3, B6, B9, and E, but they are particularly high in vitamin C; four medium-sized ripe tomatoes fully cover an adult's daily requirement. Additionally, tomatoes contain lycopene. This organic compound, which gives the fruit its rich red color, is a powerful natural antioxidant (surpassing the properties of well-known 'free radical catchers' like vitamins C and E). Moreover, the same lycopene significantly reduces the risk of cardiovascular diseases. To maximize the benefits of a tomato salad, dress it with your favorite vegetable oil, as lycopene is better absorbed when combined with plant fats! It is believed that tomatoes are much healthier when cooked. When tomatoes are heated at high temperatures, after just 2 minutes, the lycopene content increases by one-third compared to raw fruits. If boiled for 15 minutes, the concentration of this substance rises by 1.5 times. Tomatoes not only heal the body but also soothe the weary soul. They contain 'ready-made' serotonin, known as the happiness hormone, and tyramine — an organic compound that converts into serotonin in the body. Thanks to this, tomatoes improve mood and act as natural antidepressants in stressful situations. Another pleasant and highly beneficial property of tomatoes is their low calorie count (23 kcal per 100g). The chromium found in tomatoes promotes quicker satiety and helps prevent episodes of 'ferocious' hunger. However, it's important to note that those with metabolic disorders and allergies to red vegetables and fruits should limit their intake of tomatoes. As a dietary product, fresh tomatoes and tomato juice are recommended for conditions that involve metabolic disturbances, especially water-salt metabolism, cardiovascular diseases, and gastrointestinal disorders. Tomato juice is also effective in cases of vitamin A deficiency.

Ingredients

  • Sun-Dried Tomatoes - 1 glass
  • Tomatoes - 1 piece
  • Water - 2 glasses
  • Avocado - ½ pieces
  • Garlic - 1 clove
  • Salt - to taste
  • Meyer Lemon Juice - to taste

Step by Step guide

Step 1

Soak the sun-dried tomatoes in room temperature water for one hour.

Step 2

Remove the seeds from the fresh tomato, and peel the avocado and remove the pit.

Step 3

Chop the vegetables, adding salt and lemon juice, in a blender until smooth.

Step 4

Add water.

Step 5

Serve with fresh green basil leaves.

You can make sun-dried tomatoes yourself. It's best to use Georgian varieties of tomatoes, which are meaty. Slice them into rounds about 1 cm thick and bake in the oven at 100-120°C (210-250°F) for about 3 hours.
