Tomato Fish Soup
Ingredients
- Cod fillet - 7.1 oz
- Tomatoes - 3 pieces
- Rice - ¼ cup
- Garlic - 1 clove
- Onion - 1 head
- Olive Oil - 1 tablespoon
- Water - 10 fl oz
- Parsley - 1 bunch
- Mild Chili Spice - ¼ piece
Step by Step guide
Step 1
Finely chop the onion and garlic. Cut the tomatoes in half and place them cut side up on a baking sheet. Top the tomatoes with the onion and garlic, then drizzle with olive oil. Bake in a preheated oven at 392°F for 30 minutes.
Step 2
Cook the rice until half done (10–12 minutes).
Step 3
Blend the roasted tomatoes into a puree.
Step 4
In a deep skillet, combine the rice, tomato puree, and pour in a cup of water. Stir and bring to a boil, add salt, then add the cod fillet cut into small pieces. Cook for 10 minutes.
Step 5
One minute before finishing, add finely chopped chili pepper and chopped herbs.
