Ingredients
- Tomatoes - 24.7 oz
- Onion - 2.6 oz
- Butter - 2.1 oz
- Carrot - 2.6 oz
- Parsley - 1.8 oz
- Rice - 4.1 oz
- Sugar - 0.2 oz
- Garlic - 2 cloves
- Chicken Broth - 1 qt
- Salt - to taste
Step by Step guide
Step 1
Sauté the peeled and finely chopped onion in butter or vegetable oil until lightly browned. Select ripe tomatoes, wash them, cut into wedges, and cook with the onion over low heat in a covered pot.
Step 2
When the tomatoes soften, add the washed and peeled carrot, parsley, and the sorted and washed rice, then add the broth or vegetable stock, season with salt, add sugar and crushed garlic.
Step 3
Cook in a covered pot for 45-50 minutes until the rice reaches a creamy consistency.
Step 4
Pass everything through a sieve and bring to a boil again, stirring with a spoon to prevent sticking. Serve with croutons.
