  • Canned tomatoes - 21.2 oz
  • Red Onion - 0.5 oz
  • Cucumbers - 1.1 oz
  • Red Wine Vinegar - 0 fl oz
  • Water - 3 fl oz
  • Salt - a pinch
  • Sugar - a pinch
  • Green basil oil - 0 fl oz
  • Stracciatella cheese - 2.8 oz
  • Cilantro - 0.4 oz
  • Parsley - 0.4 oz
  • Tarragon - 0.4 oz

Step by Step guide

Step 1

Toast the bread in the oven until a crispy crust forms.

Step 2

Blend the green bell pepper, celery root, red onion, olive oil, cucumbers, toasted bread, and red wine vinegar until smooth.

Step 3

Next, add the canned tomatoes, peeled fresh tomatoes, cold water, and red wine vinegar, and blend everything until homogeneous.

Step 4

Season to taste with salt, sugar, and pepper.

Step 5

Serve the finished soup with stracciatella or any soft vegan cheese, fresh cucumber, finely chopped jalapeño pepper, and bell pepper.

Step 6

Drizzle with green oil and olive oil.
