Step by Step guide
Step 1
Toast the bread in the oven until a crispy crust forms.
Step 2
Blend the green bell pepper, celery root, red onion, olive oil, cucumbers, toasted bread, and red wine vinegar until smooth.
Step 3
Next, add the canned tomatoes, peeled fresh tomatoes, cold water, and red wine vinegar, and blend everything until homogeneous.
Step 4
Season to taste with salt, sugar, and pepper.

Serve the finished soup with stracciatella or any soft vegan cheese, fresh cucumber, finely chopped jalapeño pepper, and bell pepper.
