Tomato Puree Soup
Ingredients
- Olive Oil - 2 spoons
- Onion - 1 head
- Garlic - 3 cloves
- Passata Tomato Sauce - 1 tablespoon
- Basil - 1 bunch
- Crushed Tomatoes in Their Own Juice - 14.1 oz
- Milk - 13 fl oz
- Activated Baking Soda - a pinch
- Sugar - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a pot, heat the olive oil. Sauté the finely chopped onion and garlic over medium heat until softened, about five minutes. Add the tomato paste to the onion, cooking and stirring for 30 seconds, then add the tomatoes, basil, salt, and pepper.
Step 2
Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.
Step 3
Purée the soup in a blender and pour it back into the pot.
Step 4
In a small bowl, mix a tablespoon of milk with a pinch of baking soda to prevent lumps. Add the mixture to the soup in the pot, stir, then pour in the remaining milk. Stir the soup again and bring it to a boil. Reduce the heat and simmer for 5 minutes.
Step 5
Taste the soup. If necessary, add sugar, salt, and pepper. Serve hot.
