Squeeze the juice from the tomatoes and strain it through a sieve and several layers of cheesecloth. There is no need to push the juice through; it should drain on its own. This way, clear tomato water will pass through the sieve, while the pulp will remain on the cheesecloth.
Step 2
Add a few drops of lemon juice and a sprig of basil to the tomato water, gently muddle it to release the basil's essential oils.
Step 3
Pour the tomato water over liquid nitrogen and whisk until you achieve icy flakes. Alternatively, you can simplify the process by pouring the tomato water onto a flat dish and placing it in the freezer for a few hours, checking every 20 minutes to stir the mixture.
