Tomato Sorbet
Ingredients
- Tomatoes - 3 lbs
- Onion - 1 head
- Fresh Mint - 1 piece
- Basil - 1 piece
- Marjoram - 1 piece
- Raw cane sugar - 2 tablespoons
- Passata Tomato Sauce - 1 tablespoon
- Lemon - 2.5 pieces
Step by Step guide
Step 1
Peel the tomatoes and chop them finely. Also chop the onion finely. Place the tomatoes, onion, mint, basil, and marjoram in a saucepan and cook over low heat, stirring, for 30 minutes.
Step 2
Remove the herbs, cool the tomatoes, then blend them in a blender and transfer to a container suitable for the freezer. Stir in the tomato paste, juice of two lemons, and sugar. Place in the freezer for at least 4 hours.
Step 3
Remove the sorbet from the freezer, gently crumble it, and serve in cups, garnished with a slice of lemon on the rim.
